  • Origin & Appellation
Montilla (Córdoba, Andalusia) – D.O. Montilla-Moriles. From one of Spain’s most historic regions for the ageing of fortified wines, renowned for patience, tradition and depth.
  • Grape varieties
100% Pedro Ximénez, the region’s emblematic grape, here shaped into an Amontillado that combines the finesse of its initial flor ageing with the intensity of long oxidative maturation.
  • Winemaking & ageing
The wine begins its life under flor, like a Fino, before evolving through more than 35 years of oxidative ageing in the traditional criaderas and solera system, using American oak casks. Bottled “en rama”, without filtration or fining, to preserve its full aromatic purity and natural complexity.
  • Producer profile
Bodegas Toro Albalá, founded in 1922, stands as one of the most emblematic houses of Montilla-Moriles. Its Poley range pays tribute to the elegance and authenticity of fortified wines, guided by an unwavering commitment to time, craftsmanship and tradition.
  • Special details
Crafted from first-press musts and aged artisanally for over three decades. A limited-production enological jewel, offering a rare balance of power, depth and harmony — an exceptional bottle to transform a refined gift in Barcelona into a lasting memory.

About the Winery

Bodegas Toro Albalá, located in Aguilar de la Frontera (Córdoba), is an international benchmark for aged wines.

Founded in 1922 by José María Toro Albalá, it was one of the first wineries to bottle high-end fine and sweet wines under the Montilla-Moriles Designation of Origin.

The Poley series represents its homage to classic Córdoba wines: wines that mature slowly and quietly, with respect for time, history, and Andalusian tradition.

Safe shipping and tracking at all times.

Pairing

Perfect with aged cheeses, toasted almonds, Iberian ham, sautéed mushrooms, and truffle dishes. It also pairs beautifully with cold soups like salmorejo or smoked fish.
