It is a non-certified organic wine, vinified using the ancestral method, a traditional technique from the 16th century that allows obtaining a sparkling wine without a second fermentation in the bottle.

This wine stands out for its fine and elegant bubbles, with a natural fermentation that is completed in the bottle, without adding yeasts or external sugars. Bottled without filtering or clarifying, and aged for 5 months on its own lees, L'Apical Ancestral offers an authentic and unique experience, with a fresh and fruity profile.

About the Winery

L'Apical is a project that was born in 2012 in the heart of the Penedès, the result of the union of Sergi Sevillano and Martí Giralt. With a family background in the world of wine, Martí, who has been linked to viticulture for more than 40 years, has joined forces with Sergi to create wines that reflect authenticity and respect for tradition.

The winery focuses on the production of natural wines, made with ancestral techniques and without chemical additives, which allows them to offer unique products, such as the Coll de la Sitja Ancestral, with limited productions that guarantee quality and uniqueness in each bottle.
