Extraordinary aging
This Brut Nature rests for 84 months in the cellar, developing a creamy structure and elegant nuances. Hand-harvested at night to prevent oxidation, followed by gentle pressing at very low pressure. Naturally clarified by decantation (fermentation at controlled temperatures between 14–16 °C in stainless steel tanks). Manual disgorgement without freezing the neck.

Avinyó is a family winery located in the heart of Alt Penedès, specifically in Avinyonet del Penedès. With a philosophy based on sustainable agriculture and absolute respect for the environment, Avinyó cultivates its vineyards and controls the entire process from vine to glass.

The Esteve family produces its cavas exclusively using the traditional method, focusing on long aging and limited batches that enhance the authenticity of each plot. La Ticota, their flagship cava, comes from a unique vineyard that gives its name to this top-of-the-range sparkling wine and is a tribute to the know-how passed down from generation to generation.
