About the Winery

El Jimador is produced at the prestigious Casa Herradura, one of Mexico's oldest and most illustrious distilleries, located in Amatitán, Jalisco. Founded in 1870, Casa Herradura has been a pioneer in the production of 100% blue agave artisanal tequila, using traditional methods such as natural fermentation and slow-cooking the agave in masonry ovens. Its name pays homage to the "jimadores," the expert agave harvesters, whose mastery is passed down from generation to generation.
