About the Winery

Don Papa is made on the island of Negros Occidental, Philippines, known locally as "Sugarlandia" for its ideal essentials for farming sugarcane. The distillery selects only the highest quality molasses—known as "black gold"—from indigenous sugarcane grown in volcanic soils at the foot of Mount Kanlaon. After fermentation and distillation, the rum ages in American oak barrels for several years, in a tropical habitat that accelerates the development of aromas and texture. Founded in 2012, the Don Papa brand pays tribute to Papa Isio, a Filipino revolutionary leader, and embodies the free and exotic character of his homeland.
